• Roast Beef Melt

Ingredients:

• 2 slices of light oatmeal bread
• 2 slices of low-fat cheese
• 8 oz of deli roast beef
• Onion slices
• 2 tsp brown mustard

Instructions:

1. Lightly butter one side of each slice of bread.
2. Place in a skillet on med-heat.
3. Add one slice of cheese one each slice of non-buttered bread.
4. Add the roast beef on one slice.
5. Top with mixed sliced onions and brown mustard.
6. Take the other slice and top the sandwich.
7. Grill on each side until golden brown.

• Mushroom Soup

Ingredients:

• 2 tsp of olive oil
• One sliced onion
• 13 oz of mushrooms
• 1 tsp of chopped oregano
• 4 cups of low sodium chicken broth

Instructions:

1. Using a stove pan, heat the olive oil and add the onions. Don’t brown the onions just soften them up.
2. Be sure to add oregano and mushrooms. Stir well and soften the mixture as well.
3. Now bring the chicken broth to a boil.
4. Reduce heat and simmer for 10 to 15 minutes.
5. Let it cool in the freezer for 20 minutes.
6. Microwave for 4 minutes before eating.
